Place all the ingredients except prunes and alcohol into a large saucepan, Simmer for 1 hour until the syrup reduce a little and thicken. Add the prunes and allow to cool. Once cold remove the lemon. Put into sterilised jar and add a teaspoon of alcohol. Store in the refrigerator for 1 week to plump. Once opened keep in the fridge and use quickly.
Gift Tip:
Clementines in liqueur
Wash and peel the clementine.
Put the zests the alcohol in a sealed jar. Leave for 1 month and filter.
