Preparation time: 30 minutes
Serves 8

Ingredients

  • 450g smoked rainbow trout
  • 2 tablespoons lemon juice
  • 2 tablepoons extra-virgin olive oil
  • 200ml cream

    Procedure

    Remove the skin and bones from the smoked trouts.
    In a food processor, whiz together the olive oil, 2 teaspoons of cream and lemon juice until the past is thick.
    Slowly pour in the remaining cream. Mix well.
    Season with salt and pepper.
    Serve with crackers or vegetebles for dipping.
