Smoked trout

Preparation time: 5 minutes
Serves 6-8
Ingredients
400g smoked trout
70g of bag mixed salad leaves
Dressing
Juice and zest of 1 lemon
Handfull basil leaves, chopped
4 tablespoons olive oil
1 tablespoon smooth mustard
1 tablespoon capers
1 tablespoon caster sugar
Procedure
Mix together all dressing ingredients. Season.
Arrange on plates and serve with dressing.
Serve with crisp vegetables (carrots...) or biscuits.
Can be prepared a week in advance.
