Baked salmon

Preparation time: 10 minutes
Total cooking time: 30 minutes + 45 minutes standing
Serves 8

Ingredients

  • 2kg Salmon
  • 3 sprigs fresh dill
  • 1 lemon, thinly sliced
  • 2 spring onions
  • 5 black peppercorns
  • 50ml dry white wine
  • 2 bay leaves

    Procedure


    Preheat oven to 180°C, 350°F, Gaz 4
    Use cold running water to rinse the salmon. Dry inside and out with paper towels.
    Fill the cavity with the onions, dill, lemon slices and peppercorns.
    Cuta large double-layered piece of foil and brush it with oil.
    Place the salmon on the foil, sprikle the wine and arrange the bay leaves near the head.
    Wrap the foil tightly. Do not open the foil during cooking time.
    Place in a shallow baking dish and bake for 30 minutes.
    Turn the oven off and leave the salmon for a further 45 minutes.
    Remove the foil and carefully remove the skin of the salmon on both sides.
    Take off fines and all visible bones.
    Serve at room temperature with lemon slices and a mayonaise or herb sauce.
