Bread sauce

Preparation time: 5 minutes
Total cooking time: 15 minutes
Serves 6-8.

Ingredients

  • 600ml full-fat cream
  • 1 onion, finely chopped
  • 6 black peppercorns
  • 2 bay leaves
  • 4 cloves
  • 150g bread crumbs
  • 2 tablespoons double cream
  • Pinch of ground nutmeg
  • Salt and freshly milled black pepper

    Procedure


    Put the milk, onions, bay leaves, cloves, perppercorns and nutmeg in a small pan.
    Bring to boil, simmer for 10 minutes.
    Remove the bay leaves, onions and spices by straining through sieve.
    Add bread crumbs into milk and stir.
    Pour over thr cream but do not stir - this prevent a skin forming on the sauce.
    Store in the fridge.
    Gently reheat 10 minutes before serving, stirring constantly.
    Season.

    Cranberry sauce


    Preparation time: 5 minutes
    Total cooking time: 20 minutes
    Serves 6-8.

    Ingredients

  • 400g fresh or frozen cranberries
  • 25g butter, softened
  • 450g soft brown sugar
  • Juice and zest of 1 orange
  • 1 cinnamon stick
  • 5 cloves
  • 5 tablespoons port
  • Salt and black pepper

    Procedure

    Put all the ingredients except cranberries, butter and seasonings into a pan.
    Simmer for 10 minutes then add the cranberries for a further 10 minutes
    Add the butter and season to taste.
    Allow to cool - the sauce will thincken slightly. Serve with roast turkey, goose ham or duck.

    Gravy


    Preparation time: 10 minutes
    Total cooking time: 5 minutes
    Serves 6-8.

    Ingredients

  • Turkey juices
  • 2 tablespoons plain flour
  • 100ml dry white wine

    Procedure

    Strain the turkey juices from the tin into a jug. All to cool so that fat raises to the top
    Skim of 2 tablespoons fat and place it in the roasting tin or in a pan. Stir in the flour, cook over low heat for 2-3 minutes until lightly golden.
    Whisk in the wine and 100ml of the turkey juices until smooth.
    Add the rest of the juices and bring to boil, stir often until thicken.
    Season with salt and pepper. Suitable for all roast meats.
