Orange and cranberry stuffing

Preparation time: 15 minutes + 15 minutes cooling
Total cooking time: 5 minutes
Serves 6-8.
Ingredients
75g dried cranberries
25g butter, softened
1 onion, finely chopped
Juice and zest of 1 orange
100g fresh white bread crumbs
300g pork sausage meat
2 tablespoons chopped fresh thyme leaves.
Procedure for the stuffing
Prepare the stuffing on Christmas Eve.
Soak the cranberries in the orange juice and zest. Set aside.
Melt the butter in a large frying pan over a low heat.
Add the onion and cook gently for 10 minutes until softened. Allow to cool.
Miw all the remaining stuffing ingredients in a large bowl. Season and add the cooled onions.
Cover and refrigerate.
Olive stuffing
Preparation time: 5 minutes
Total cooking time: 25 minutes
Serves 8.
Ingredients
4 shallots, finely chopped
2 tablespoons olive oil
12 black olives, chopped
3 tablespoons fresh parsley, chopped
1 clove garlic, crushed
100g fresh white bread crumbs
1 egg, lightly beaten
2 tablespoons chopped fresh thyme leaves.
Procedure for the stuffing
Preheat the oven to 190°C, 375°F, Gas 5.
Add oil to frying pan and fry shallots and garlic until softened.
Remove from heatand stir in breadcrumbs, olives and herbs.
Add the egg and mix.
Add 3 tablespoons of water to make a paste.
Season, cover and refrigerate. Use to stuff turkey.
