Preparation time: 1/2 hour
Total cooking time: 1.30 hour
Serves 6-8.

Ingredients

  • 1 egg, lightly beaten
  • 6 mashed ripped bananas
  • 370g mixed died fruits
    Orange cream
  • 315ml of cream
  • 2 tablespoons orange juice
  • 1 tablespoon finely grated orange rind
  • 1 teaspoon vanilla essence

    Procedure

    Prepare a 1.25 litre pudding bassin. (Follow instructions on 'Preparing' page).
    mix the banana, egg, fruit and bread crumbs in a bowl. Spoon into the prepared bassin.
    Cook for one and half hour.
    Simmer for 1 hour. Add water if needed after one hour.
    For the orange cream, mix well the cream, juice, rind and vanilla.
