Preparation time: 20 minutes + cooling
Total cooking time: 25 minutes
This is a very rich cake so you'll only need to serve small portions.

Ingredients

  • 300g plain chocolate
  • 200g whole blanched hazelnuts
  • 150g butter
  • 150g golden caster sugar
  • 2 tablespoons plain flour
  • 1 tablespoon Frangelico (Hazelnut flavored liqueur) or brandy.
  • 200g cream, whipped
  • Icing sugar

    Procedure

    Preheat the oven to slow 150°C
    Put the chocolate in a large heatproof boal. half fill a saucepan with water and bring to the boil. Remove from heat and place the bowl over the pan.
    Stir until chocolate is melt. Set aside to cool slightly.
    Meanwhile, whizz the hazelnuts in a mixer until it looks like coarse bread crumbs.
    Set aside. Place greaseproof paper on the base of a 20cm loose-based cake tin.
    Beat the sugarand butter togather until the mixture is light and creamy, then mix in the melted chocolate, hazelnuts, flour, Frangelico (or brandy), eggs.
    Fold in the cream and and pour the mixture in the tin.
    Tip into the tin and bake for 25 minutes, or until just set.
    Leave to cool until room temperature in the tin.
    Dust the sugar before serving and decorate with a flower if you wish.
    Cut into thin wedges to serve.
